Happy New Year!
Kona wanted to wish everyone a happy holiday season. She is very excited about her new family
member, Karen Nicole, she was born at 4:47pm on Friday, November 26th, in Mesa, Arizona at Banner
Mesa Hospital. She was 20 inches long, and weighed 7 pounds 2 ounces (which leaves plenty of
room in her diapers since they hold up to 15 pounds).
Karen's hearing is great in both ears, and all other tests have come back 100% positive.

Karen Nicole Foster is almost 4 months old now, and she is growing like a weed, though we like
to think of her as a rose among thorns. She just started to eat rice cereal, and seems to enjoy it.
She's now sitting up on her own for about 10 to 15 seconds, she can stand strong on her own if
someone is keeping her ballanced, and she picks her head up and rests on her elbows when she lays
on her tummy. She laughs at daddy most of the time, especially when he speaks to her in Klingon,
and she has a funny giggle when Kona licks her feet.

IF CHANGE IS CONSTANTLY HAPPENING, IS IT STILL CHANGE?
Karen has started pre-school and loves every day of it. Her favorite thing at the moment is her Cubbies uniform
for AWANA (kids club at our church). She also loves to sing and looks forward to Sunday School every week.
Andrea is working part-time at Wal-Mart, and spends her free time with Karen or working in AWANA with the
Sparks kids.
Dave is still suffering from a pinched nerve in his neck, but it has improved, though other medical
complications have plagued him. He's "in transition", as he likes to say, working at Wal-Mart in Inventory Control,
but has been seeking better employment (possible update on this soon).
The biggest change for the Foster family is yet ANOTHER move at the beginning of the year. We have moved again
to Richland, Washington, where Dave is from. His parents are still excited to have Karen so close, and
Dave is still introducing Andrea and Karen to his old stomping grounds.

Jesus Arrested
1When he had finished praying, Jesus left with his disciples and crossed the Kidron Valley. On the other side there was an olive grove, and he and his disciples went into it.
2Now Judas, who betrayed him, knew the place, because Jesus had often met there with his disciples. 3So Judas came to the grove, guiding a detachment of soldiers and some officials from the chief priests and Pharisees. They were carrying torches, lanterns and weapons.

- Steam 1 c. chopped celery, 1 c. red bell pepper, 1 c. Cut Broccoli, and 1/2 c. water for 5 minutes.

- Cook meat and vegetables on grill until chicken is done.

walnuts.
- Poach chicken breasts in a mixture of half water, half white wine. Tear chicken into irregular pieces.

- Stir in 1 10.75 oz. can cream of mushroom soup, 1/4 c. water, 1 tbsp soy sauce, heat to boiling.
- Reduce heat to low, cover and cook 5 minutes or until vegetables are tender.
- Serve over pasta or rice

Honey-Orange Glazed Chicken
- Combine 1/4 c. honey with 2 tbsp. frozen orange juice concentrate, 1 tsp grated orange zest, 1 clove garlic,

- Rinse 6 boneless skinless chicken breasts with cold water and pat dry. Season lightly with salt. Heat
1 tbsp. margarine and 1/2 tsp vegetable oil over medium-high heat. Add chicken and cook about 4 minutes,
until seared. Turn chicken; cook another 4 minutes until just cooked through.
- Pour honey mixture over chicken and cook, turning chicken to coat as sauce begins to thicken, about 2 minutes.
Serve chicken breasts with honey-orange glaze spooned over the top. Sprinkle with parsley and green onion.

- Rinse 1 1/4 lb salmon steak with water and place in non-metal container or plastic bag.

minutes.
- Place salmon in broiler or on a medium-high heat grill, and cook for 6 minutes per side or until salmon is cooked
through.

- Wash and dry 1 lb. pork tenderloins and cut thick end into 3/4-inch-thick slices. Leave the thin end in one piece.

- Dip each piece of pork into maple syrup mixture.
- Arrange pork pieces in aluminum lined broiler pan and broil 2 inches from heat source for about 10 minutes; turn
and broil 5 minutes longer, until meat is no longer pink.

a dash of salt and the juice from half a lemon, and process until smooth.

- In a large saucepan, melt 1/2 stick unsalted butter over medium heat. Saute the 1/2 c. chopped onion and 1 1/2 c.

- Add 4 c. rich chicken stock, whisk until smooth. Bring to a boil, add 1 1/2 c. milk, reduce heat, simmer until

Honey Mustard Salmon
- Preheat grill on high or preheat broiler to 450 degrees F.
- Whisk together 1 tsp dried dillweed (or 2 tbsp fresh), 2 tbsp dijon mustard, and 1 tbsp honey.
- Rinse 6 4-oz. salmon fillets and pat dry with paper towels. Brush mustard mixture all over flesh side of salmon.
- Put fish skin side down on grill or a baking sheet with vegetable oil spray. Grill or broil about 6-inches
from heat for about 6 minutes, or until fish is barely translucent at its thickest part. Fish will cook a
little more after you remove it from the heat.

- In a medium skillet, heat 2 tbsp vegetable oil. Add 2 cloves minced garlic.

- Add clams, 1/2 c. dry white wine, 1 tsp dried basil and 1/2 tsp white pepper.

- Over low heat, or in a microwave, heat 2 tbsp butter and 1 tbsp olive oil until butter is melted.

done) on a fine wire-mesh screen placed on the grill rack.
- Mix 1/2 c. sour cream and 1 tsp horseradish and keep chilled until ready to use.
- Spoon the horseradish mixture over cooked fillets, and garnish with paprika.

1 pound lean stew beef
1 pound baby carrots
4 medium red potatoes, diced
4 stalks celery, diced
1 onion, peeled and diced
1 10.75-ounce can reduced-fat tomato soup
1 cup red wine or cooking wine
4 cloves garlic, minced
1 bay leaf
4 whole cloves
Salt and black pepper to taste
1 (10-ounce) package frozen peas
- Place all ingredients except peas in a slow cooker. Cover and cook on low for 8 to 10 hours. Stir in peas. Remove
bay leaf and cloves before serving.

Barbecued Brisket
- Trim excess fat from 5 lb. beef brisket. Season brisket with salt, heavy pepper, and garlic powder. Mix 1/2 c. liquid
smoke, 1/2 c. vinegar, 1/2 c. light brown sugar, 1/2 c. ketchup, and 1/2 c. Worcestershire sauce together and
spread over the brisket. Cover and refrigerate overnight.
- Bake brisket and marinade in oven at 300°, covered, for 4 to 5 hours. May also use Slow Cooker!

- Combine zest from 1 lemon, 12 green olives (pitted & chopped), and 2 tbsp
olive oil in a small bowl. Spread a little of the olive mixture on the bottom

smoked mozzarella cheese and top with the remaining bread. If using a baguette,
slice the sandwich into 4 equal portions.

Beef Stroganoff
- Cook 4 cups wide egg noodles, keep warm.
- Slice 1 lb. 1/4" round tip steaks lengthwise in half then crosswise into 1" wide strips.
- Heat 2 tsp vegetable oil over medium-high heat until hot. Working in 2 batches, add beef and 1 clove garlic
crushed. Stir-fry each batch 1 minute or until outside surface of beef is no longer pink. (Do not overcook).
Remove from skillet; season w/ 1/4 tsp salt and 1/4 tsp pepper and set aside.
- Cook mushrooms in 2 tsp oil for 2 minutes until tender, stirring occasionally. Remove from heat.
- Add 1 package brown gravy mix and 1 cup cold water to 1/2 lb sliced mushrooms; blend well. Bring to a boil
- Reduce heat to low; simmer 1 minute or until sauce is thickened. Return beef to skillet, heat through.
- Serve over noodles; top with 1/4 c. sour cream.

Green Salsa / Seafood Salsa
- Over open flame, roast 8-10 jalepeño peppers for 10 minutes, then remove from heat and cover with ceran wrap for 1 hour
- Put jalepeños and 5 steak tomatoes in blender and purée
- Add 2 finely chopped white onions, 1 clove of fresh garlic (minced), 2 tsp salt, and 2-3 cups of water for desired consistency.
- When ready to serve, add finely chopped fresh cilantro. (cilantro will spoil the salsa over time)
- OPTION: Add clams with clam juice and imitation crab flakes for a great seafood salsa.

- Preheat grill on high or preheat broiler to 450 degrees F.
- Whisk together 1 tsp dried dillweed (or 2 tbsp fresh), 2 tbsp dijon mustard, and 1 tbsp honey.
- Rinse 6 4-oz. salmon fillets and pat dry with paper towels. Brush mustard mixture all over flesh side of salmon.
- Put fish skin side down on grill or a baking sheet with vegetable oil spray. Grill or broil about 6-inches
from heat for about 6 minutes, or until fish is barely translucent at its thickest part. Fish will cook a
little more after you remove it from the heat.
